As the hot summer season continues, it is a good time to try easy recipes that can be served by the pool or at a weekend barbeque. If you are looking to make a simple cake recipe that seems like you put more work into it, keep on reading.

First things first, the ingredients you will need:


2 cups sugar

1/2 Cup light butter

4 oz. block of low fat cream cheese, softened 

3 large eggs

1 large egg white

3 cups all purpose flour

2 cups blueberries

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 (8oz.) low fat lemon yogurt

2 teaspoons vanilla extract

1/2 cup powdered sugar

4 teaspoon lemon juice

 

Preparation:

Before starting with your ingredients, you are going to want to begin preheating your oven to 350 degrees. Once you have your oven going, mix together the sugar, butter, and cream cheese on a medium speed for 5 minutes.

Once that is blended well, combine 2 tablespoons of flour with your blueberries in a small bowl and toss well. This will allow the blueberries to be spread all throughout the cake for more flavor, rather than sinking straight to the bottom. 

Next you are going to combine the remaining flour with baking powder, baking soda, and salt and then whisk together. 

Once you have finished that, add the flour mixture to the sugar mixture and add in the lemon yogurt. You will want to begin and end with the flour. 

After that is done, you are going to fold in the blueberries and vanilla. Be careful when mixing together. You do not want to burst the blueberries!

Now you are going to want to pour the mixture into a greased bundt cake tin and place in the oven for 1 hour and 10 minutes.

Once the time is open, remove tin carefully and allow time for the cake to cool. When it is at room temperature, remove cake carefully out of tin. 

OPTIONAL: If you want to create a sweet light frosting, combine powdered sugar and lemon juice in a small bowl. Drizzle over cake.
