Hi friends, it’s Morgan from The Patient Mom blog, and this time I am coming to you with something a little different - a cupcake recipe that is perfect for springtime (or Easter!).
These adorable bird egg cupcakes are the perfect sweet treat and they also look adorable set up on the wooden pedestal from the Decocrated Spring 2022 Box. Add the metal birdcage and ceramic birds and you have a display perfect for entertaining this spring! Follow my recipe instructions below (super easy, I promise) to whip up your own batch.
Ingredients/Supplies
-
1 box white cake mix (and ingredients needed on the box)
-
1 container vanilla frosting (or cream cheese frosting)
-
Food coloring
-
Hershey chocolate Easter eggs (or jelly beans)
-
Spring sprinkles
-
Shredded coconut
-
Cupcake liners
-
Cupcake tin
-
Butter knife
-
Mixer
Instructions
Prepare cupcake batter according to the boxed cake mix package.
When the batter is made, separate into smaller batches (if wanting to make multiple colors of cupcakes) and add food coloring of your choice to each.
Stir until you are pleased with the color.
Add cupcake liners to the cupcake tin, spray with oil or pam, and fill ¾ with batter. Bake according to instructions on the box. When finished baking, allow cooling completely.
Use green food coloring to dye the vanilla frosting into a green frosting.
Frost each cupcake with green frosting.
Roll the sides of the frosted top in sprinkles. You may want to press some on with your fingers as well. Add some green food coloring to the coconut flakes and stir until green.
Sprinkle the tops of the cupcakes with green coconut to look like grass.
Place a chocolate egg of each color on top of the coconut flakes in the middle of the cupcake. Use some extra frosting to help them stick if needed.
And you are done! Aren’t they the cutest? So perfect for spring or Easter.
I absolutely love all of the pastel colors and I think the sprinkles really help bring it all together. I hope you will try these pretty cupcakes yourself!
