When the weather turns cool, I’m often quick to crave a nice warm soup or chili. Snuggling up inside with my favorite slippers, cozy loungewear, and a bowl of warm yummy goodness sounds like a great night-in to me.
A crowd favorite in our household is chili. Chili was a favorite meal as a child, and now my children love it just as much. My recipe is so easy to make and hardly takes any time to prepare, leaving you plenty of time to create winter memories with your family. This chili is a savory dish that can be served with or without ground beef, and it is just as good either way! My family prefers meatless. Because the recipe is so easy, I often like to double the recipe to have plenty of leftovers.
- 1 medium-sized onion
- 1 packet taco seasoning
- 1 pound ground beef (can skip this to make a vegetarian chili)
- 1 can of pinto beans
- 1 can light red kidney beans
- 1 can dark red kidney beans
- 2 8oz. cans of tomato sauce
- 1 can petite diced tomatoes
QUICK NOTE ABOUT MAKING THIS VEGETARIAN OR NOT:
If you are going to include ground beef in your chili, use the taco seasoning with the beef as instructed below. If you decide to skip the ground beef, then just pour the taco seasoning into the chili as the last ingredient.
1.) Start by browning the ground beef in a pan. Add 1 packet of taco seasoning to the beef and stir to coat.
2.) Dice the onion and cook with a little bit of cooking oil in a large pot over medium heat.
3.) Once the onion is tender and translucent, add the pinto beans, light red kidney beans, and dark red kidney beans (do not drain them, just pour them in).
4.) Pour in the tomato sauce and diced tomatoes.
5.) Add in the ground beef (or just the taco seasoning if not using ground beef) and stir everything together.
6.) Bring the chili to a boil and then reduce to low heat.
7.) Cook for 1 hour, stirring occasionally.
8.) Serve and enjoy!
In our house, we love to add shredded cheddar cheese and crackers to the chili. It is also great served with warm cornbread. I hope you enjoy it!
