Grandpas Favorite Cookie Recipe 

Even though the holidays are behind us, I still have the itch to bake! I baked quite a bit during the holidays too, but for me, it’s not limited to just the holiday season! How about you? Will you bake with me? I thought I’d get a little personal today and share a favorite family recipe! The family recipe I’m going to share with you today is such a unique and yummy staple for us! I have no idea (nor could I track down by asking around) where this recipe came from but we lovingly call them “Grandpa’s Favorite Cookies” because my great grandfather loved these so much! 

 

I enlisted the help of my mom and my four-year-old daughter Macey because what’s better than cooking a family recipe with multiple generations!? Nothing! This one is super simple, here’s what you’ll need:

1 Baking sheet lined with parchment paper 

1 cup butter

1 cup brown sugar

1 cup white sugar

2 cups flour

2 cups Rice Krispies 

1 cup coconut

1 cup chopped nuts (of your choice - we used pecans, walnuts are also great!) 

2 eggs

1 T vanilla

1 tsp baking soda 

1/2 tsp baking powder

1/2 tsp salt

Start by creaming both kinds of sugar and the butter together using an electric mixer, then add eggs and vanilla until it is mixed thoroughly. If you don’t have an electric mixer you can mix by hand with a whisk or wooden spoon, just make sure you whisk all the clumps out!

In a separate bowl, mix flour, salt, powder, and baking soda together. Then add the dry mixture to the cream mixture - mix on medium speed until combined, then add remaining ingredients. Roll dough into balls (about 1.5 inches big), set balls on your baking sheet lined with parchment paper about three inches apart, flatten each ball with a fork dipped in flour. Finally, place in the oven and bake at 425 for 7 min.

What I love about these cookies is that you can bake to your preference of crispy-ness and it doesn’t change the integrity of the cookie. My mom loves these a little crunchier, but my dad and I love them a bit softer. You can adjust the bake time. For softer cookies - 7 minutes, for crunchier cookies - add two minutes at a time until you reach the consistency you like!
