2023 is almost here friends! Can you believe it? I don’t know about you but it’s been a whirlwind of a year…and the holiday rush, so real!! I’m looking forward to the reset that the new year brings. 

Today I wanted to share a simple cocktail recipe that we plan to have to bring in the new year. After all the holiday prep, I couldn’t do anything too complicated (can I get an amen?) so this is super easy! You can embellish the cocktail a little if you want, I’ll give you some ideas! 


The ingredients are simple: champagne & ice cream. Boom done. 

Yes, you guessed it, we are making champagne floats! Trust me, they’re good! You have a lot of leeway here on flavor. I personally love vanilla for this recipe but feel free to grab a sorbet flavor if that’s calling to you or even a full fruit flavor! The possibilities are endless. 

Depending on your flavor choice you can garnish with a chocolate rim and sprinkles or garnish with fruit if that fits the flavor profile better! 

For my specific cocktail: 

1 bottle of champagne 

1 tub of vanilla ice cream

Chocolate chips (to melt and dip the rim in)

Festive sprinkles for the chocolate rim

First prepare your chocolate by melting it in the microwave. Do this slowly, only microwave chocolate a few seconds at a time in a microwave-safe dish, stirring frequently. 

Champagne glasses, chocolate rims

Dip each glass into the melted chocolate, covering the rim. Then add festive sprinkles if you choose! 


Once the glass is prepped, add one scoop of vanilla ice cream to each glass. Then fill the rest of the glass with champagne! That’s it! It’s so delicious!
